"Lactase persistence" refers to the ability of a person to continue digesting lactose, which is the sugar found in milk, even after infancy. Normally, as we grow older, our bodies produce less lactase, the enzyme needed to break down lactose. However, individuals with lactase persistence can still produce enough lactase to digest lactose throughout their lives.
